Easy Taco Soup

Here's a quick and easy recipe for taco soup.  The great thing about this recipe is that it's not even really a recipe, you can make it up as you go along.  Add whatever your family likes.
Here's how we like it:

Brown 1 pound of ground turkey or beef
Season with a packet of taco seasoning
Add:
1/2 a chopped onion
2 cans of diced tomatoes
1 can of low sodium chicken broth - you can use water instead, if you want
Throw in some of the following:
canned or frozen corn 
chopped carrots
a can or two of your favorite type of beans
Simmer and then enjoy!  It's great by itself or you can serve it over tortilla chips with some shredded cheese and sour cream.

Chex Cereal at Safeway

I found a good deal on Chex cereal at Safeway this week.  It's on sale for $1.67 a box.  If you use the $1 off 2 coupon here,  and load the $1 off 2 electronic coupon here to your Safeway card, you can get 2 boxes at .67 each!  The electronic coupon can only be used once, but print multiple copies of the other coupon and you can still get the cereal for $1.17 each!  I rarely see this cereal go on sale, so this is a good time to stock up!

Homemade Wheat Bread

I love homemade bread and am always looking for a great recipe.  I recently came across this amazing recipe.  It is so delicious!  We use it to make sandwiches, serve it with honey butter, eat it with dinner, or just as a snack.  It's quick and easy to make. 


Homemade Wheat Bread
1 cup warm water (110-115 degrees F.)
1 Tablespoon milk
2 Tablespoons oil
4 Tablespoons brown sugar
1 teaspoon salt
2 cups whole-wheat flour
1 cup all-purpose flour
2 teaspoons dry yeast

Put all ingredients in the bread machine in the order listed. Set on dough cycle. When dough cycle is finished, take dough out and shape into a loaf in a greased bread pan. Cover and let rise in a warm place for 30-45 minutes (until doubled). Bake at 350 degrees F. for 25 minutes or until golden brown.

October Goal Update

Here's an update on how I did on my October goals.

Goal #1:  For the month of October, we are going to try to cut our grocery and household budget by $250.  This budget will include all food, cleaning supplies, health/beauty products, diapers, and even dining out.  I think we can do it!  In order to help achieve this goal, we are going to use the envelope budget.  We will put a specific amount of cash for our groceries and household items into an envelope.  Once the money is spent, that's it..no more shopping for the month! p
Update:  We didn't quite make it.  We were close, I was still able to cut our grocery/household budget by $219.  I didn't use the envelope budget.  Maybe I would have done better if I did, but I found it a pain to always have to go the to the ATM and I don't like carrying around large amounts of cash.  Instead I was very careful to save my receipts and record all my spending - even little things...like a $2 snack.  I'll continue to work towards my $250 savings for the month of November.

Goal #2:  Decrease our use of paper towels.  I realized we were going through almost a roll a day.  Not only is this wasteful, but costly!  Our goal is to use hand towels more frequently and cut our paper towel usage down to only 1 roll a week.  
Update:  We did it!  We only used 3 1/2 rolls of paper towels this month!  Instead of having the paper towels out on the counter by the sink, we moved them to the pantry, so they weren't as easily accessible.  We were also really good about using hand towels more frequently.
