Oatmeal Raisin Cookies

Fall is here!  I love the sights and smells of Fall.  The colder weather gets me in the mood to bake.  The aroma of cinnamon and cloves baking makes the house seem so warm and cozy. Here's the recipe for my favorite oatmeal raisin cookies to help you welcome Fall into your home.

Oatmeal Raisin Cookies

1 cup butter, softened

1 cup packed light brown sugar

½ cup white sugar

2 eggs

1 teaspoon vanilla extract

¾ cup flour

¾ cup whole-wheat flour - If you don't have whole wheat flour, you can use all-purpose instead.

1 teaspoon baking soda

1 teaspoon salt

1 ¼ teaspoons cinnamon

½ teaspoon ground cloves

1 cup raisins (soak in hot water for 10 minutes to plump, then drain)

Preheat the oven to 350 degrees.  Cream the butter, brown sugar, and white sugar together.  Mix in the eggs and vanilla.  Combine the two types of flour, baking soda, salt, cinnamon, and cloves in a separate bowl.  Then pour the flour mixture into the sugar mixture and mix well.   Stir in the oats and plumped raisins.  Drop by rounded teaspoonfuls on to a cookie sheet and bake for about 11 minutes.  Remove cookies from the oven and let them cool on the cookie sheet for a few minutes before transferring them to a cooling rack.  Enjoy!

Makes about 3 dozen cookies
